Arroz con Carne

Description

A comforting dish of rice with chicken and vegetables that brings family together.


Ingredients

  • 160 g Basmati rice
  • 250 g passierte tomates (pureed tomatoes)
  • 100 g peas
  • 2 bell peppers
  • 450 ml vegetable broth
  • 350 g chicken breast fillet
  • 2 tsp salt
  • 1 tsp sweet paprika
  • 1/2 tsp cayenne pepper or spicy paprika
  • 2 garlic cloves
  • 1 onion

Instructions

  1. Peel and finely chop the onion and garlic.
  2. Cut the bell peppers into small cubes.
  3. Slice the chicken breast fillets into pieces about 1 cm in size.
  4. Heat olive oil in a deep pan or pot.
  5. Sauté the chopped onion in the heated oil.
  6. Add the bell peppers and chicken, cooking for an additional 2 minutes.
  7. Mix in the spices and garlic, sautéing briefly.
  8. Add the rice and peas, and deglaze with tomatoes and vegetable broth.
  9. Cover and simmer for about 14 minutes until the rice is cooked.
  10. Taste and enjoy.

Notes

Use good quality olive oil for better flavor. Don’t overcook the chicken to prevent it from drying out. Adjust the cayenne or spicy paprika to your preference for additional heat.
