  • 4 guajillo chiles
  • 2 ancho chiles
  • 2 medium tomatoes
  • 3 cloves of garlic
  • 1 onion
  • 1 teaspoon cumin
  • 1 bay leaf
  • Salt to taste
  • Water (enough to cover the meat)
  • Corn tortillas (for tacos)
  • Cilantro (optional, for serving)
  • Chopped onion (optional, for serving)
  • Lemon (optional, for serving)

Instructions

  1. Brown the beef in a large pot over medium heat to develop rich flavor.
  2. Toast the guajillo and ancho chiles lightly in a skillet.
  3. Soak the toasted chiles in hot water for 20 minutes to rehydrate.
  4. Blend the rehydrated chiles with tomatoes, garlic, onion, cumin, and salt, adding some soaking water for a smooth sauce.
  5. Pour the sauce over the browned meat and add necessary water along with the bay leaf.
  6. Simmer for 180 minutes or until the meat is tender.
  7. Shred the meat and serve in a bowl with the broth.
  8. Use warmed corn tortillas to assemble tacos with shredded meat, cilantro, and chopped onion to taste.

Notes

Marinating the meat beforehand can enhance its flavor. Prepare the birria a day early for deeper flavor development.
