- 4 guajillo chiles
- 2 ancho chiles
- 2 medium tomatoes
- 3 cloves of garlic
- 1 onion
- 1 teaspoon cumin
- 1 bay leaf
- Salt to taste
- Water (enough to cover the meat)
- Corn tortillas (for tacos)
- Cilantro (optional, for serving)
- Chopped onion (optional, for serving)
- Lemon (optional, for serving)
Instructions
- Brown the beef in a large pot over medium heat to develop rich flavor.
- Toast the guajillo and ancho chiles lightly in a skillet.
- Soak the toasted chiles in hot water for 20 minutes to rehydrate.
- Blend the rehydrated chiles with tomatoes, garlic, onion, cumin, and salt, adding some soaking water for a smooth sauce.
- Pour the sauce over the browned meat and add necessary water along with the bay leaf.
- Simmer for 180 minutes or until the meat is tender.
- Shred the meat and serve in a bowl with the broth.
- Use warmed corn tortillas to assemble tacos with shredded meat, cilantro, and chopped onion to taste.
Notes
Marinating the meat beforehand can enhance its flavor. Prepare the birria a day early for deeper flavor development.
