Description

Delicious and tender brownie petit fours topped with a rich ganache and fleur de sel, perfect for any gathering.


Ingredients

  • 4 ounces (approximately ¾ cup) semisweet chocolate, chopped
  • ¾ cup (12 tablespoons or 165 g) unsalted butter
  • ¾ cup (150 g) granulated sugar
  • ½ cup (100 g) light brown sugar
  • 3 large eggs
  • 1½ teaspoons vanilla extract
  • 1 cup (140 g) all-purpose flour
  • ¾ cup (65 g) cocoa powder
  • ¾ teaspoon salt
  • 6 ounces semisweet chocolate, chopped or in chips
  • ¾ cup (6 ounces) heavy whipping cream
  • Fleur de sel, for sprinkling

Instructions

  1. Melt the semisweet chocolate and butter together in a medium saucepan over low heat, stirring until smooth.
  2. Remove from heat and stir in granulated and brown sugars until fully combined. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. Sift together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet mixture until fully combined.
  4. Pour the brownie batter into the prepared pan, smoothing the top. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  5. Allow the brownies to cool completely in the pan. Once cooled, transfer to a cutting board and cut into small squares or rectangles to create the petit fours.
  6. For the ganache, heat the heavy cream in a saucepan over medium heat until it begins to boil. Remove from heat and pour over the chopped semisweet chocolate. Let sit for 2–3 minutes to melt, then stir until smooth and glossy.
  7. Pour ganache over each petit four, allowing it to coat evenly. Let the excess drip off and let the ganache set for a few minutes.
  8. Lightly sprinkle fleur de sel over each petit four for a perfect balance of sweet and salty. Allow the ganache to set completely before serving.
