Description

Ingredients

  • 2 median zucchinis
  • 3 cloves of garlic
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Fresh parsley (optional)
  • A splash of vinegar or lemon juice (optional)
  • Grated cheese (optional)

Instructions

  1. Cut the zucchinis into thick slices or half-moons, about 1 to 1.5 cm thick.
  2. Sprinkle with salt and let rest for 20 to 30 minutes to extract moisture.
  3. Rinse the zucchini lightly to remove excess salt and dry thoroughly with paper towels.
  4. Heat a large skillet over medium-high heat and add the olive oil.
  5. Add the zucchini in a single layer and cook for 2-3 minutes per side until golden. Avoid overcrowding the pan for even cooking.
  6. Add the garlic in the last 1-2 minutes of cooking and stir until fragrant.
  7. Remove from heat and add parsley, a splash of vinegar or lemon juice, and grated cheese if desired. Serve immediately.

Notes

For a softer texture, consider roasting the zucchini instead of sautéing it. This may take longer but adds a wonderful smoky flavor.
