- 2 median zucchinis
- 3 cloves of garlic
- 2 tablespoons extra virgin olive oil
- Salt to taste
- Fresh parsley (optional)
- A splash of vinegar or lemon juice (optional)

Instructions
- Cut the zucchinis into thick slices or half-moons, about 1 to 1.5 cm thick.
- Sprinkle with salt and let rest for 20 to 30 minutes to extract moisture.
- Rinse the zucchini lightly to remove excess salt and dry thoroughly with paper towels.
- Heat a large skillet over medium-high heat and add the olive oil.
- Add the zucchini in a single layer and cook for 2-3 minutes per side until golden. Avoid overcrowding the pan for even cooking.
- Add the garlic in the last 1-2 minutes of cooking and stir until fragrant.
- Remove from heat and add parsley, a splash of vinegar or lemon juice, and grated cheese if desired. Serve immediately.
Notes
For a softer texture, consider roasting the zucchini instead of sautéing it. This may take longer but adds a wonderful smoky flavor.
