Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (such as Monterey Jack or cheddar)
  • 1 tablespoon olive oil
  • 1/2 cup chopped onions
  • 1/2 cup diced bell peppers
  • Salt and pepper, to taste
  • Flour or corn tortillas

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onions and bell peppers. Sauté until they soften, about 4-5 minutes.
  3. Season with salt and pepper, then add the shredded cooked chicken to the skillet. Mix well to combine and heat through.
  4. Remove the skillet from the heat and set aside.
  5. Preheat another skillet or griddle over medium heat.
  6. Place a tortilla in the preheated skillet. Sprinkle half of the cheese evenly over one half of the tortilla.
  7. Spoon some chicken mixture onto the cheese-covered half of the tortilla.
  8. Fold the tortilla in half to cover the filling and press gently.
  9. Cook for 2-3 minutes or until the underside is golden. Flip and cook the other side for an additional 2-3 minutes until crispy and the cheese has melted.
  10. Remove the quesadilla from the skillet. Cut into wedges and serve.

Notes

For added textures, consider incorporating fresh ingredients like avocado or salsa. A sprinkle of fresh herbs right before serving adds a burst of color and freshness.
