- 2 cups shredded cooked chicken
- 1 cup shredded cheese (such as Monterey Jack or cheddar)
- 1 tablespoon olive oil
- 1/2 cup chopped onions
- 1/2 cup diced bell peppers
- Salt and pepper, to taste
- Flour or corn tortillas
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped onions and bell peppers. Sauté until they soften, about 4-5 minutes.
- Season with salt and pepper, then add the shredded cooked chicken to the skillet. Mix well to combine and heat through.
- Remove the skillet from the heat and set aside.
- Preheat another skillet or griddle over medium heat.
- Place a tortilla in the preheated skillet. Sprinkle half of the cheese evenly over one half of the tortilla.
- Spoon some chicken mixture onto the cheese-covered half of the tortilla.
- Fold the tortilla in half to cover the filling and press gently.
- Cook for 2-3 minutes or until the underside is golden. Flip and cook the other side for an additional 2-3 minutes until crispy and the cheese has melted.
- Remove the quesadilla from the skillet. Cut into wedges and serve.
Notes
For added textures, consider incorporating fresh ingredients like avocado or salsa. A sprinkle of fresh herbs right before serving adds a burst of color and freshness.
