Ingredients

  • 1 ripe avocado
  • 2 dates, pitted
  • 1 tablespoon blue spirulina powder
  • 1 cup almond milk (or any plant-based milk)
  • 1/2 cup gluten-free oats
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chocolate chips
  • Chocolate-covered chia seeds (for topping)
  • Cacao nibs (for topping)

Instructions

  1. In a blender, combine the banana, avocado, dates, blue spirulina, and almond milk. Blend until smooth and creamy.
  2. Pour the smoothie mixture into a bowl.
  3. In a separate bowl, mix together the gluten-free oats, almond flour, coconut flour, melted coconut oil, maple syrup, and vanilla extract to create the cookie dough.
  4. Fold in the chocolate chips into the cookie dough mixture.
  5. Scoop small amounts of the cookie dough and place them on top of the smoothie bowl.
  6. Sprinkle chocolate-covered chia seeds and cacao nibs over the bowl for garnish.
