- 1 ripe avocado
- 2 dates, pitted
- 1 tablespoon blue spirulina powder
- 1 cup almond milk (or any plant-based milk)
- 1/2 cup gluten-free oats
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup chocolate chips
- Chocolate-covered chia seeds (for topping)
- Cacao nibs (for topping)
Instructions
- In a blender, combine the banana, avocado, dates, blue spirulina, and almond milk. Blend until smooth and creamy.
- Pour the smoothie mixture into a bowl.
- In a separate bowl, mix together the gluten-free oats, almond flour, coconut flour, melted coconut oil, maple syrup, and vanilla extract to create the cookie dough.
- Fold in the chocolate chips into the cookie dough mixture.
- Scoop small amounts of the cookie dough and place them on top of the smoothie bowl.
- Sprinkle chocolate-covered chia seeds and cacao nibs over the bowl for garnish.
