A delightful dish featuring tender chicken, vibrant asparagus, earthy mushrooms, and creamy sauce over penne pasta.


Ingredients

  • 8 oz penne pasta
  • 2 boneless, skinless chicken breasts
  • 1 cup mushrooms, sliced
  • 1 cup asparagus, cut into pieces
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and season with salt and pepper. Cook for 6-7 minutes on each side or until cooked through. Remove from the skillet and slice.
  3. In the same skillet, add the mushrooms and asparagus. Sauté for about 5 minutes until tender. Add garlic and cook for another minute.
  4. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and combined.
  5. Add the cooked pasta and sliced chicken back into the skillet. Toss to combine and heat through.
  6. Garnish with fresh parsley and serve.
