- 8 oz penne pasta
- 2 boneless, skinless chicken breasts
- 1 cup mushrooms, sliced
- 1 cup asparagus, cut into pieces
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chicken breasts and season with salt and pepper. Cook for 6-7 minutes on each side or until cooked through. Remove from the skillet and slice.
- In the same skillet, add the mushrooms and asparagus. Sauté for about 5 minutes until tender. Add garlic and cook for another minute.
- Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and combined.
- Add the cooked pasta and sliced chicken back into the skillet. Toss to combine and heat through.
- Garnish with fresh parsley and serve.
Notes
Serve immediately for the best creamy texture. Store leftovers in an airtight container for up to three days.
