A comforting and savory chicken pie with a flaky crust, filled with tender chicken and vibrant vegetables.


Ingredients

  • For the crust:
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, chilled and diced
  • 1/4 cup cold water
  • 1 teaspoon salt
  • For the filling:
  • 2 cups cooked chicken, shredded
  • 1 cup chicken broth
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water until the dough comes together.
  3. Roll out two-thirds of the dough on a floured surface and place it in a pie dish.
  4. In a skillet, heat the olive oil over medium heat and sauté the onion until translucent.
  5. Add the shredded chicken, chicken broth, mixed vegetables, garlic powder, and black pepper. Cook until heated through.
  6. Pour the chicken mixture into the pie crust.
  7. Roll out the remaining dough to cover the pie. Seal the edges and cut slits in the top for steam.
  8. Bake for 30-35 minutes or until golden brown.
  9. Allow to cool for a few minutes before serving.

Notes

For variations, try adding herbs or a bit of sour cream for a creamier filling.
