- For the crust:
- 2 cups all-purpose flour
- 1 cup unsalted butter, chilled and diced
- 1/4 cup cold water
- 1 teaspoon salt
- For the filling:
- 2 cups cooked chicken, shredded
- 1 cup chicken broth
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water until the dough comes together.
- Roll out two-thirds of the dough on a floured surface and place it in a pie dish.
- In a skillet, heat the olive oil over medium heat and sauté the onion until translucent.
- Add the shredded chicken, chicken broth, mixed vegetables, garlic powder, and black pepper. Cook until heated through.
- Pour the chicken mixture into the pie crust.
- Roll out the remaining dough to cover the pie. Seal the edges and cut slits in the top for steam.
- Bake for 30-35 minutes or until golden brown.
- Allow to cool for a few minutes before serving.
Notes
For variations, try adding herbs or a bit of sour cream for a creamier filling.
