Ingredients

- 1 liter whole milk
- 200 ml heavy cream (30% fat)
- 4 large eggs
- 150 grams sugar
- 100 grams cornstarch
- 1 Madagascar vanilla bean
- 250 grams all-purpose flour
- 125 grams butter
- 1 egg yolk
- salt, to taste
- extra sugar, for flavor
- cold water, as needed
Instructions
- Mix the flour, sugar, and salt with the butter until sandy.
- Add cold water gradually to form a dough.
- Wrap in plastic and chill for at least 30 minutes.
- Heat the milk and cream until just before boiling; add the vanilla bean to infuse.
- Beat the eggs, sugar, and cornstarch together until smooth.
- Slowly pour the hot milk mixture into the egg mixture, whisking constantly.
- Return the mixture to the saucepan and cook over medium heat until thickened.
- Preheat the oven to 180°C (350°F).
- Pour the cream mixture into the prepared crust and bake for 50-60 minutes, or until set and golden.
- Cool before serving.
Notes
Infusing the vanilla properly is key to a flavorful flan. Ensure ingredients are at room temperature for best results.
