Description

A traditional flan recipe that evokes memories of love and family, featuring a creamy texture flavored with Madagascar vanilla.


Ingredients

  • 1 liter whole milk
  • 200 ml heavy cream (30% fat)
  • 4 large eggs
  • 150 grams sugar
  • 100 grams cornstarch
  • 1 Madagascar vanilla bean
  • 250 grams all-purpose flour
  • 125 grams butter
  • 1 egg yolk
  • salt, to taste
  • extra sugar, for flavor
  • cold water, as needed

Instructions

  1. Mix the flour, sugar, and salt with the butter until sandy.
  2. Add cold water gradually to form a dough.
  3. Wrap in plastic and chill for at least 30 minutes.
  4. Heat the milk and cream until just before boiling; add the vanilla bean to infuse.
  5. Beat the eggs, sugar, and cornstarch together until smooth.
  6. Slowly pour the hot milk mixture into the egg mixture, whisking constantly.
  7. Return the mixture to the saucepan and cook over medium heat until thickened.
  8. Preheat the oven to 180°C (350°F).
  9. Pour the cream mixture into the prepared crust and bake for 50-60 minutes, or until set and golden.
  10. Cool before serving.

Notes

Infusing the vanilla properly is key to a flavorful flan. Ensure ingredients are at room temperature for best results.
