Ingredients

- 500 g of potatoes
- 100 g of stale bread (or breadcrumbs)
- 1 egg
- 50 g of grated Parmigiano Reggiano
- 1 clove of garlic (optional)
- Chopped parsley (to taste)
- Salt and pepper (to taste)
- Olive oil for frying
Instructions
- Boil the potatoes in salted water until tender, about 20-25 minutes.
- Drain and mash the potatoes in a large bowl while they are still warm.
- Add the crumbled stale bread (or breadcrumbs), egg, grated Parmigiano Reggiano, chopped parsley, and minced garlic if using. Season with salt and pepper to taste.
- Mix thoroughly until you achieve a homogeneous mixture. If too sticky, incorporate additional breadcrumbs.
- Create small portions of the mixture, forming balls about the size of a walnut.
- Heat olive oil in a non-stick pan. Fry the meatballs in batches, turning occasionally until golden, about 3-4 minutes per side.
- Place the meatballs on paper towels to absorb excess oil.
Notes
Use starchy potatoes for fluffier texture. You can also bake the meatballs for a healthier option.
