Description

Ingredients

Scale
  • 500 g of potatoes
  • 100 g of stale bread (or breadcrumbs)
  • 1 egg
  • 50 g of grated Parmigiano Reggiano
  • 1 clove of garlic (optional)
  • Chopped parsley (to taste)
  • Salt and pepper (to taste)
  • Olive oil for frying

Instructions

  1. Boil the potatoes in salted water until tender, about 20-25 minutes.
  2. Drain and mash the potatoes in a large bowl while they are still warm.
  3. Add the crumbled stale bread (or breadcrumbs), egg, grated Parmigiano Reggiano, chopped parsley, and minced garlic if using. Season with salt and pepper to taste.
  4. Mix thoroughly until you achieve a homogeneous mixture. If too sticky, incorporate additional breadcrumbs.
  5. Create small portions of the mixture, forming balls about the size of a walnut.
  6. Heat olive oil in a non-stick pan. Fry the meatballs in batches, turning occasionally until golden, about 3-4 minutes per side.
  7. Place the meatballs on paper towels to absorb excess oil.

Notes

Use starchy potatoes for fluffier texture. You can also bake the meatballs for a healthier option.
