Description

Delicious rolled Korean omelette with layers of egg, ham, and vegetables.


Ingredients

  • 6 large eggs
  • 1.5 oz spam (finely chopped)
  • 1.5 oz carrot (finely chopped)
  • 1 green onion stalk (sliced)
  • ¼ tsp kosher salt
  • ½ tsp toasted sesame oil (optional)
  • Oil (for cooking, any neutral oil)

Instructions

  1. Break the eggs into a large measuring cup or bowl and beat until well mixed.
  2. Add the spam, carrot, green onion, salt, and sesame oil; mix well to combine.
  3. Heat an 8-inch non-stick skillet over medium-low heat and lightly grease the skillet with a bit of oil.
  4. Once the skillet is hot, pour a thin layer of the egg mixture into the skillet, tilting and moving it as needed to cover the bottom.
  5. Wait until the egg is set on the bottom and no longer liquid but still moist on top, then use a spatula to go around the edge of the omelette.
  6. Lift one side of the egg and fold it over itself about one inch; gently press with the spatula and repeat folding until a tail of 2-3 inches remains.
  7. Push the omelette to one side and lightly grease the open side of the skillet with oil.
  8. Pour another thin layer of egg mixture into the open side, ensuring it touches the tail of the omelette to connect the layers.
  9. Once the new layer is set, repeat the folding process until all the egg mixture is used.
  10. Optional: For straighter sides, use two spatulas to press on each side or transfer to a sushi mat and mold the rolled omelette.
  11. Transfer the rolled omelette to a cutting board to cool until comfortable to handle, then cut into 8 slices or desired thickness. Enjoy!

Notes

Use a silicone spatula to avoid scratching the skillet for a smoother finish. Customize by adding more egg mixture for extra layers.
