Delicious zucchini roll-ups filled with ricotta, basil, and tomato sauce, perfect for sharing at any occasion.
Ingredients

- 4 zucchinis
- 1 tablespoon olive oil
- A pinch of salt and pepper
- 1 cup ricotta cheese
- 1/4 cup grated parmesan cheese
- 1/4 cup chopped fresh basil
- 1 clove garlic, minced
- Salt and pepper to taste
- 1 egg
- 1 jar of your favorite tomato sauce
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Cut the zucchinis lengthwise into 1/4-inch thick strips.
- Mix the zucchini slices with the olive oil, salt, and pepper, and bake for 10 minutes.
- In a bowl, combine the ricotta, parmesan, basil, garlic, salt, pepper, and the egg until well blended.
- Take each zucchini slice, fill it with the cheese mixture, and roll it up.
- Cover the bottom of a baking dish with tomato sauce, place the zucchini rolls inside, and top with more sauce.
- Sprinkle the shredded mozzarella on top.
- Bake at 400°F for 8-10 minutes until the cheese is melted and bubbly.
- Garnish with fresh basil before serving.
Notes
For a crispy texture, bake the zucchinis a little longer before rolling. Feel free to experiment with different cheese and herb combinations.
