Description

Delicious zucchini roll-ups filled with ricotta, basil, and tomato sauce, perfect for sharing at any occasion.


Ingredients

  • 4 zucchinis
  • 1 tablespoon olive oil
  • A pinch of salt and pepper
  • 1 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 egg
  • 1 jar of your favorite tomato sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Cut the zucchinis lengthwise into 1/4-inch thick strips.
  2. Mix the zucchini slices with the olive oil, salt, and pepper, and bake for 10 minutes.
  3. In a bowl, combine the ricotta, parmesan, basil, garlic, salt, pepper, and the egg until well blended.
  4. Take each zucchini slice, fill it with the cheese mixture, and roll it up.
  5. Cover the bottom of a baking dish with tomato sauce, place the zucchini rolls inside, and top with more sauce.
  6. Sprinkle the shredded mozzarella on top.
  7. Bake at 400°F for 8-10 minutes until the cheese is melted and bubbly.
  8. Garnish with fresh basil before serving.

Notes

For a crispy texture, bake the zucchinis a little longer before rolling. Feel free to experiment with different cheese and herb combinations.
