A delightful meal featuring succulent salmon fillets paired with crispy potatoes and fresh broccoli, all bathed in a vibrant lemon garlic butter sauce.

- 4 6 oz salmon fillets
- 1/4 cup unsalted butter
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Lemon slices, for garnish
- Fresh parsley, chopped
- 1.5 lbs baby potatoes, halved
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 lb broccoli florets
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon lemon zest (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the halved baby potatoes in a large bowl. Drizzle with 3 tablespoons of olive oil, garlic powder, paprika, salt, and pepper. Toss to coat evenly.
- Spread the baby potatoes on a baking sheet. Roast for about 25-30 minutes or until crispy and golden brown, flipping halfway through.
- Meanwhile, heat the unsalted butter in a skillet over medium heat. Add the minced garlic and sauté until fragrant.
- Stir in the fresh lemon juice and remove from heat. Season the salmon fillets with salt and pepper.
- Push the baby potatoes to one side of the baking sheet. Place the salmon fillets skin-side down on the other side and brush with the lemon garlic butter mixture.
- Add the broccoli florets to the same baking sheet. Drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss to coat.
- Return the baking sheet to the oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and the broccoli is tender.
- Garnish with lemon slices and freshly chopped parsley before serving.
Notes
Consider marinating the salmon in the lemon garlic mixture for up to an hour before cooking to deepen the flavors. You can also customize your vegetables based on what’s in season.
