- 4 small tart apples, finely chopped
- 30 g brown sugar
- 2 teaspoons cornstarch
- 1 teaspoon ground cinnamon
- 50 g water
- 185 g cake flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 115 g unsalted butter
- 200 g granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 150 g milk
- 60 g unsalted butter (for frosting)
- 125 g cream cheese
- 75 g powdered sugar
- 1 teaspoon ground cinnamon (for frosting)
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Prepare the apple filling by mixing chopped apples, 30 g brown sugar, 2 teaspoons cornstarch, 1 teaspoon cinnamon, and 50 g water in a saucepan. Cook until apples are tender and the liquid thickens. Remove from heat and let cool.
- In a large bowl, beat 115 g unsalted butter and 200 g granulated sugar until smooth and creamy.
- Add eggs one at a time along with the vanilla extract. Mix well before adding the milk.
- In a separate bowl, combine cake flour, baking powder, 1 teaspoon ground cinnamon, and salt. Incorporate this dry mixture into the butter-sugar mixture.
- Prepare muffin tins and fill each cup halfway with batter. Add a tablespoon of the apple filling in the center of each muffin mix.
- Cover the filling with more batter and bake in the preheated oven for 20-25 minutes or until a toothpick inserted comes out clean. Let cool completely before frosting.
Notes
For a unique twist, consider adding nuts or dried fruits to the filling.
