Ingredients

  • 1 tablespoon light sesame oil
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 4 cups dashi broth (or chicken broth)
  • 3 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 2 tablespoons mirin
  • Bok choy, chopped
  • 6 oz ramen noodles (fresh or dried)

Instructions

  1. Heat the sesame oil in a large pot over medium heat.
  2. Add minced garlic and sliced green onions, and sauté until fragrant, about 1 minute.
  3. Pour the dashi or chicken broth into the pot and bring to a boil.
  4. Reduce the heat and add miso paste, soy sauce, and mirin. Stir well to dissolve the miso paste.
  5. Add the chopped bok choy and ramen noodles. If using dried noodles, break them in half before adding.
  6. Ensure the noodles are submerged in the broth, cover the pot, and simmer for 3-4 minutes (if using fresh noodles, cook for only 1-2 minutes).
  7. Serve hot.
