- 1 tablespoon light sesame oil
- 2 cloves garlic, minced
- 2 green onions, sliced
- 4 cups dashi broth (or chicken broth)
- 3 tablespoons miso paste
- 1 tablespoon soy sauce
- 2 tablespoons mirin
- Bok choy, chopped
- 6 oz ramen noodles (fresh or dried)
Instructions
- Heat the sesame oil in a large pot over medium heat.
- Add minced garlic and sliced green onions, and sauté until fragrant, about 1 minute.
- Pour the dashi or chicken broth into the pot and bring to a boil.
- Reduce the heat and add miso paste, soy sauce, and mirin. Stir well to dissolve the miso paste.
- Add the chopped bok choy and ramen noodles. If using dried noodles, break them in half before adding.
- Ensure the noodles are submerged in the broth, cover the pot, and simmer for 3-4 minutes (if using fresh noodles, cook for only 1-2 minutes).
- Serve hot.
