- 2 tablespoons extra virgin olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 whole garlic cloves, unpeeled
- ½ green bell pepper, chopped
- ½ yellow bell pepper, chopped
- ½ red bell pepper, chopped
- 400g bomba or parboiled rice
- 400g cooked octopus, chopped
- 400g squid rings
- 2 packets saffron dissolved in 1.2 liters of fish broth
- Salt to taste
- Black pepper to taste
- 400g pre-cooked shrimp
- 200g frozen peas
- 500g mussels
- ½ bunch of chopped parsley
- Bell peppers for decoration
- 4 whole large pre-cooked shrimp
- Juice of lemon
Instructions
- Heat the olive oil in a large pan over medium heat.
- Add the chopped onion, minced garlic, and bell peppers. Sauté for a few minutes until tender.
- Incorporate the rice and mix to coat in oil and flavors, cooking for 2-3 minutes.
- Add the octopus, squid, and half of the fish broth. Mix and adjust salt and pepper to taste.
- As the liquid dries, gradually add more broth, ensuring the rice remains al dente.
- When the liquid is almost gone, incorporate the shrimp and peas.
- Next, mix in the mussels and parsley, distributing them throughout the paella.
- Top with sliced bell peppers and the large shrimp for decoration.
- Cover the pan with a lid and cook for 15 minutes.
- Finish with a drizzle of lemon juice and a bit more olive oil.
Notes
Use fresh seafood for the best flavor. Avoid stirring the rice once the broth is added to create a ‘socarrat’ texture at the bottom.
