Description
Delicious homemade pangoccioli, soft and fluffy, infused with chocolate and orange zest, perfect for breakfast or a sweet treat.
Ingredients

- 100 g farina 00
- 250 g farina Manitoba
- 180 g farina 00
- 16 g lievito di birra fresco (or 5 g lievito di birra secco)
- 1 cucchiaino miele (or sugar)
- 90 ml latte intero (or partially skimmed milk)
- 1 uovo
- 1 tuorlo
- 140 g zucchero semolato
- 30 ml latte intero
- 130 ml acqua (at room temperature)
- 80 g burro (softened)
- 100 g gocce di cioccolato (preferably cold from the fridge)
- 1 cucchiaino sale
- 1 arancia (grated zest)
Instructions
- Dissolve the lievito in the acqua together with the miele and let sit for 10 minutes.
- In a large bowl, mix the farinas and the sale.
- Create a hole in the flour mixture and add the lievito mixture.
- Add the latte and mix until a dough forms.
- Knead the dough for about 10 minutes until smooth.
- Incorporate the burro and continue kneading until well integrated.
- Add the gocce di cioccolato and grated arancia, ensuring they are evenly distributed.
- Cover the dough and let it rest in a warm place for about 1 hour until it doubles in size.
- Once the dough has risen, divide it into portions and shape them into small balls.
- Place the balls on a baking sheet and let rest again for 30 minutes.
- Preheat the oven to 180°C.
- Bake the pangoccioli for 15-20 minutes until golden.
- Cool before serving.
Notes
Use room temperature ingredients for better dough integration. Ensure that the yeast is active; if it doesn’t bubble, it’s not working correctly. For a shiny finish, a light milk wash at the end can add a special touch.
