Description

A classic Italian comfort food dish featuring pasta, a rich tomato sauce, and plenty of melted mozzarella.


Ingredients

  • 400g (14 oz) pasta (penne or rigatoni)
  • 800g (28 oz) canned whole tomatoes or fresh diced tomatoes
  • 250g (9 oz) mozzarella cheese, cubed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 50g (1/4 cup) grated parmesan cheese
  • 3 tablespoons olive oil
  • Fresh basil leaves, to taste
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Once boiling, add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
  3. Add minced garlic and cook for about one minute, being careful not to burn.
  4. Add the tomatoes, either canned or fresh, stirring well, and season with salt and pepper. Cook for 15-20 minutes until the sauce thickens.
  5. Add the cooked pasta to the skillet and mix with the sauce until well coated.
  6. Incorporate the mozzarella cheese, allowing it to melt slightly into the pasta mixture.
  7. Add fresh basil leaves and mix again. Taste and adjust seasoning if necessary.
  8. Optionally, transfer the pasta to a baking dish. Sprinkle with grated parmesan cheese and bake at 180°C (350°F) for 15-20 minutes, until bubbly and golden.
  9. Remove from the oven and let it rest for a few minutes before serving.

Notes

Try experimenting with different cheeses or herbs like oregano and thyme for a unique twist.
