Description
A classic Italian comfort food dish featuring pasta, a rich tomato sauce, and plenty of melted mozzarella.
Ingredients

- 400g (14 oz) pasta (penne or rigatoni)
- 800g (28 oz) canned whole tomatoes or fresh diced tomatoes
- 250g (9 oz) mozzarella cheese, cubed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 50g (1/4 cup) grated parmesan cheese
- 3 tablespoons olive oil
- Fresh basil leaves, to taste
- Salt and pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Once boiling, add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
- Add minced garlic and cook for about one minute, being careful not to burn.
- Add the tomatoes, either canned or fresh, stirring well, and season with salt and pepper. Cook for 15-20 minutes until the sauce thickens.
- Add the cooked pasta to the skillet and mix with the sauce until well coated.
- Incorporate the mozzarella cheese, allowing it to melt slightly into the pasta mixture.
- Add fresh basil leaves and mix again. Taste and adjust seasoning if necessary.
- Optionally, transfer the pasta to a baking dish. Sprinkle with grated parmesan cheese and bake at 180°C (350°F) for 15-20 minutes, until bubbly and golden.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
Try experimenting with different cheeses or herbs like oregano and thyme for a unique twist.
