Instructions

  1. Cook the pasta in salted water according to the package instructions.
  2. While the pasta is cooking, mix ricotta with olive oil, salt, pepper, and chopped garlic if desired.
  3. Once the pasta is cooked, drain and reserve some of the cooking water.
  4. Mix the hot pasta with the ricotta mixture, adding a bit of the cooking water to achieve a creamy sauce.
  5. Serve topped with fresh herbs and Parmesan cheese if desired.

Notes

To prevent overcooking, ensure the pasta is al dente. Reserve cooking water for a creamy sauce.
