  • 1 lb chicken breast (boneless/skinless; diced small)
  • 1 1/2 tbsp ranch seasoning
  • 1 1/4 tsp paprika
  • 1 tsp garlic powder
  • 3/4 tsp salt
  • 12 oz gluten free shells
  • 3 tbsp butter
  • 2 tbsp dry shallots
  • 2 tbsp minced onion
  • 1 tbsp ranch seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1 tsp chicken bouillon powder
  • 2 tbsp 1:1 gluten free flour
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese
  • 3/4 cup cheddar cheese

Instructions

  1. In a large skillet over medium heat, cook the diced bacon until crispy. Transfer bacon to a paper towel-lined plate.
  2. In the same skillet, add diced chicken breast and season with ranch seasoning, paprika, garlic powder, and salt. Cook until browned, about 6-7 minutes.
  3. Reduce heat to low, add butter, and once melted, incorporate dry shallots and minced onion. Sauté until soft.
  4. Add remaining ranch seasoning, garlic powder, salt, and chicken bouillon. Stir well.
  5. Whisk in gluten-free flour, then gradually pour in heavy cream and chicken broth, stirring until sauce thickens.
  6. Mix in parmesan and cheddar cheese until smooth. Adjust seasoning.
  7. Cook the gluten-free shells according to package instructions, then drain and add to the sauce, mixing to coat the pasta evenly.
  8. Serve hot, garnished with reserved bacon bits if desired.

Notes

For best results, cook pasta al dente and adjust seasonings to taste. Consider adding vegetables for extra nutrition.
