- 3–4 medium Patate
- 4 tablespoons Olio d’oliva
- 3 cloves Aglio tritato
- 1/4 cup Prezzemolo, chopped
- 1 teaspoon Origano
- 2 tablespoons Aceto
- 1/2 teaspoon Peperoncino
- 1 teaspoon Sale
- 1/2 teaspoon Pepe
Instructions
- Peel and cut the potatoes into cubes.
- Boil the potatoes in salted water until tender.
- In a bowl, mix together the olive oil, minced garlic, parsley, oregano, vinegar, chili, salt, and pepper to prepare the chimichurri.
- Drain the potatoes and combine them with the chimichurri, mixing well.
- Serve hot as a side dish.
Notes
Maintain the potatoes in cold water after boiling if not serving immediately to preserve texture.
