Description

Delicious potatoes enhanced with vibrant chimichurri sauce, perfect as a side dish.


Ingredients

  • 34 medium Patate
  • 4 tablespoons Olio d’oliva
  • 3 cloves Aglio tritato
  • 1/4 cup Prezzemolo, chopped
  • 1 teaspoon Origano
  • 2 tablespoons Aceto
  • 1/2 teaspoon Peperoncino
  • 1 teaspoon Sale
  • 1/2 teaspoon Pepe

Instructions

  1. Peel and cut the potatoes into cubes.
  2. Boil the potatoes in salted water until tender.
  3. In a bowl, mix together the olive oil, minced garlic, parsley, oregano, vinegar, chili, salt, and pepper to prepare the chimichurri.
  4. Drain the potatoes and combine them with the chimichurri, mixing well.
  5. Serve hot as a side dish.

Notes

Maintain the potatoes in cold water after boiling if not serving immediately to preserve texture.
