Description
A classic Philly Cheesesteak featuring juicy ribeye, caramelized onions, and melted provolone cheese in a crusty hoagie roll.

- 1 lb ribeye (trimmed and sliced thinly)
- 1/2 teaspoon sea salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 1 large sweet onion (chopped)
- 8 slices provolone cheese (soft, not aged)
- 4 hoagie rolls (cut 3/4 of the way through)
- 2 tablespoons unsalted butter (room temperature)
- 1 clove garlic (minced)
- 2–4 tablespoons mayonnaise (or to taste)
Instructions
- Cut the hoagie rolls 3/4 of the way through with a serrated knife. Then, chop the onion and slice the meat thinly. In a small bowl, mix 2 tablespoons of room temperature butter with 1 minced clove of garlic. Spread this garlic butter on the cut sides of the hoagie rolls.
- Toast the rolls in a large skillet, cooktop, or griddle over medium heat until golden and set aside. In the same skillet, add 1 tablespoon of oil and sauté the chopped onion until soft. Lightly sprinkle with salt and cook until caramelized, then transfer to a plate.
- Increase the heat to high and add 1 tablespoon of oil. Spread the sliced meat in an even layer. Allow it to sear without touching it for a couple of minutes, then flip and season with 1/2 teaspoon of sea salt and 1/2 teaspoon of black pepper. Sauté until the meat is fully cooked, then add the caramelized onions.
- Divide the mixture into 4 equal portions and top each with 2 slices of cheese. Turn off the heat to allow the cheese to melt without further cooking the meat.
- Spread a thin layer of mayonnaise on the toasted side of each roll. Working with one portion at a time, place a toasted roll over each portion of meat and use a spatula to scrape the meat and cheese mixture into the roll as you flip it. Serve hot.
Notes
Make sure to use high-quality ribeye for the best flavor and tenderness. Experiment with different cheeses if desired.
