- 2 pounds beef steak
- 1 white onion (sliced)
- 1 bell pepper (cut into 1-inch strips)
- 2 jalapeños (sliced into 1/2-inch strips)
- 4 Roma tomatoes (cut into wedges)
- 4 cloves garlic (minced)
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon Mexican oregano
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 8 ounces tomato sauce
- 16 ounces beef broth
- 1/2 bunch cilantro
Instructions
- Heat a couple of tablespoons of cooking oil in a cast iron pot or large skillet over medium-high heat. Working in batches, brown the strips of beef and then remove them from the pan.
- Add 2 tablespoons of oil and stir in the bell peppers and onion. Cook until lightly caramelized, about 5-10 minutes.
- Incorporate the spices and garlic, cooking for an additional 1-2 minutes.
- Add the tomato sauce and beef broth. Bring to a boil, then add the tomatoes.
- Reduce the heat and let the mixture simmer for 30 minutes.
- Finally, add the beef strips and cilantro, cooking for another 5-10 minutes.
Notes
Marinate the steak before cooking for enhanced flavor. Use a sharp knife for cutting the meat into uniform strips for perfect cooking.
