Ingredients

- 4 plátanos amarillos
- 2 cucharadas de aceite de aguacate (separadas)
- ½ cebolla mediana (finamente picada)
- 2 dientes de ajo (finamente picados o rallados)
- ½ pimiento verde (picado)
- ½ pimiento rojo (picado)
- 1 cucharadita de sal kosher (más al gusto)
- ½ cucharadita de pimienta negra molida
- 1 libra de carne molida
- 1 cucharada de condimento adobo
- ¼ de taza de salsa de tomate
- ¼ de taza de caldo de huesos de res Bare Bones
- ¼ – ½ cucharadita de pimienta de cayena
Instructions
- Preheat the oven to 400°F and prepare a baking sheet with parchment or foil.
- Cut the ends of the plantains and create a slit in the skin without cutting the flesh.
- Peel the plantains and drizzle with 1 tablespoon of avocado oil. Place on the baking sheet and bake for 30 minutes, flipping halfway.
- While the plantains roast, heat a skillet over medium with 1 tablespoon of avocado oil.
- Add onion, garlic, green, and red peppers. Season with salt and pepper, sauté for 5-7 minutes.
- Increase heat to medium-high, add ground beef, breaking it apart as it cooks until browned.
- Stir in the adobo seasoning, tomato sauce, beef broth, additional salt, pepper, and cayenne. Bring to a boil, then lower heat and simmer for 8-10 minutes.
- Remove plantains from the oven, create a slit along each, sprinkle with salt if desired.
- Fill each plantain with the meat and vegetable mixture and serve.
Notes
Serve with fresh lime slices or a simple green salad for a vibrant presentation.
