Ingredients

  • 4 plátanos amarillos
  • 2 cucharadas de aceite de aguacate (separadas)
  • ½ cebolla mediana (finamente picada)
  • 2 dientes de ajo (finamente picados o rallados)
  • ½ pimiento verde (picado)
  • ½ pimiento rojo (picado)
  • 1 cucharadita de sal kosher (más al gusto)
  • ½ cucharadita de pimienta negra molida
  • 1 libra de carne molida
  • 1 cucharada de condimento adobo
  • ¼ de taza de salsa de tomate
  • ¼ de taza de caldo de huesos de res Bare Bones
  • ¼½ cucharadita de pimienta de cayena

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with parchment or foil.
  2. Cut the ends of the plantains and create a slit in the skin without cutting the flesh.
  3. Peel the plantains and drizzle with 1 tablespoon of avocado oil. Place on the baking sheet and bake for 30 minutes, flipping halfway.
  4. While the plantains roast, heat a skillet over medium with 1 tablespoon of avocado oil.
  5. Add onion, garlic, green, and red peppers. Season with salt and pepper, sauté for 5-7 minutes.
  6. Increase heat to medium-high, add ground beef, breaking it apart as it cooks until browned.
  7. Stir in the adobo seasoning, tomato sauce, beef broth, additional salt, pepper, and cayenne. Bring to a boil, then lower heat and simmer for 8-10 minutes.
  8. Remove plantains from the oven, create a slit along each, sprinkle with salt if desired.
  9. Fill each plantain with the meat and vegetable mixture and serve.

Notes

Serve with fresh lime slices or a simple green salad for a vibrant presentation.
