Ingredients

- 1 Peito de frango (chicken breast)
- 2 Batatas (potatoes)
- 1 Cebolla (onion)
- 2 Alhos (garlic cloves)
- 3 tbsp Azeite (olive oil)
- 1 tsp Sal (salt)
- 1 tsp Pimenta (pepper)
- Fresh Ervas (herbs such as parsley or thyme)
Instructions
- Preheat the oven to 200°C (392°F).
- Cut the chicken breast into pieces and season with salt, pepper, and chopped garlic.
- Peel and cube the potatoes.
- In a baking dish, place the chicken and potatoes. Drizzle olive oil over and mix well.
- Add sliced onion and herbs of your choice.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes until the chicken and potatoes are golden brown.
- Serve hot.
Notes
Marinate chicken in spices for at least 30 minutes before cooking for better flavor. You can also add seasonal vegetables for variety.
