Description

A comforting and simple dish combining chicken and potatoes, perfect for any occasion.


Ingredients

  • 1 Peito de frango (chicken breast)
  • 2 Batatas (potatoes)
  • 1 Cebolla (onion)
  • 2 Alhos (garlic cloves)
  • 3 tbsp Azeite (olive oil)
  • 1 tsp Sal (salt)
  • 1 tsp Pimenta (pepper)
  • Fresh Ervas (herbs such as parsley or thyme)

Instructions

  1. Preheat the oven to 200°C (392°F).
  2. Cut the chicken breast into pieces and season with salt, pepper, and chopped garlic.
  3. Peel and cube the potatoes.
  4. In a baking dish, place the chicken and potatoes. Drizzle olive oil over and mix well.
  5. Add sliced onion and herbs of your choice.
  6. Cover the baking dish with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15 minutes until the chicken and potatoes are golden brown.
  8. Serve hot.

Notes

Marinate chicken in spices for at least 30 minutes before cooking for better flavor. You can also add seasonal vegetables for variety.
