Description

A delightful salmon dish featuring a sweet and tangy pomegranate and orange glaze, perfect for festive gatherings.

Ingredients

Scale
  • 4 salmon fillets
  • 1/2 cup pomegranate juice
  • 1/4 cup orange juice
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Pomegranate seeds for garnish
  • Orange slices for garnish

Instructions

  1. In a small saucepan, combine pomegranate juice, orange juice, honey, and Dijon mustard. Bring to a simmer over medium heat and cook until the glaze thickens, about 10-15 minutes.
  2. Season the salmon fillets with salt and pepper.
  3. Preheat the grill or a skillet over medium-high heat.
  4. Place the salmon fillets on the grill or in the skillet, cooking for 4-5 minutes on each side, or until the salmon is cooked through.
  5. Brush the glaze over the salmon fillets during the last few minutes of cooking.
  6. Remove from heat and let rest for a minute.
  7. Serve garnished with pomegranate seeds and orange slices.

Notes

For enhanced flavor, marinate the salmon in the glaze for at least 30 minutes before cooking. Serve with light sides like quinoa salad or roasted vegetables.
