Description
Patatas Bravas are a traditional Spanish dish featuring crispy potatoes served with a spicy brava sauce, perfect for sharing.

- 2 1/2 pounds Yukon Gold potatoes, cut into 3/4-inch cubes
- 1/2 teaspoon baking soda
- 1/4 cup olive oil
- Salt and pepper to taste
- Chopped parsley (optional, for garnish)
- 2 tablespoons olive oil for the brava sauce
- 1 can (28 oz) crushed tomatoes
- 3 cloves garlic, minced
- 1 sweet or yellow onion, chopped
- 2 teaspoons smoked Spanish paprika
- 1/4 teaspoon cayenne pepper (to taste)
- 2–3 dashes hot sauce (to taste)
- Salt to taste
Instructions
- Start by boiling salted water and adding the baking soda. Add the potatoes and cook until tender.
- Drain and let the potatoes cool briefly.
- In a large skillet, heat 2 tablespoons of olive oil. Add the chopped onion and cook until golden.
- Add the minced garlic and cook for another minute.
- Stir in the crushed tomatoes, paprika, cayenne pepper, and hot sauce. Simmer until thickened, about 10-15 minutes.
- In a separate pan, heat 1/4 cup of olive oil. Fry the potatoes until golden and crispy.
- Season with salt and pepper to taste and serve topped with the brava sauce.
- For garlic aioli, mix together 1/4 cup of good quality mayonnaise, 1 grated garlic clove, and 1 teaspoon of lemon juice.
Notes
Serve immediately for best texture. Adjust spice levels in the sauce to accommodate preferences.
