Description

Patatas Bravas are a traditional Spanish dish featuring crispy potatoes served with a spicy brava sauce, perfect for sharing.


Ingredients

  • 2 1/2 pounds Yukon Gold potatoes, cut into 3/4-inch cubes
  • 1/2 teaspoon baking soda
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Chopped parsley (optional, for garnish)
  • 2 tablespoons olive oil for the brava sauce
  • 1 can (28 oz) crushed tomatoes
  • 3 cloves garlic, minced
  • 1 sweet or yellow onion, chopped
  • 2 teaspoons smoked Spanish paprika
  • 1/4 teaspoon cayenne pepper (to taste)
  • 23 dashes hot sauce (to taste)
  • Salt to taste

Instructions

  1. Start by boiling salted water and adding the baking soda. Add the potatoes and cook until tender.
  2. Drain and let the potatoes cool briefly.
  3. In a large skillet, heat 2 tablespoons of olive oil. Add the chopped onion and cook until golden.
  4. Add the minced garlic and cook for another minute.
  5. Stir in the crushed tomatoes, paprika, cayenne pepper, and hot sauce. Simmer until thickened, about 10-15 minutes.
  6. In a separate pan, heat 1/4 cup of olive oil. Fry the potatoes until golden and crispy.
  7. Season with salt and pepper to taste and serve topped with the brava sauce.
  8. For garlic aioli, mix together 1/4 cup of good quality mayonnaise, 1 grated garlic clove, and 1 teaspoon of lemon juice.

Notes

Serve immediately for best texture. Adjust spice levels in the sauce to accommodate preferences.
