Ingredients

- 1 tablespoon butter
- 1 large onion
- 1 tablespoon minced garlic
- 1/2 cup grated carrots
- 2 tablespoons flour
- 2 cups chicken broth
- Salt and pepper to taste
- 1/2 tablespoon smoked paprika
- 1 cup chopped raw broccoli
- 1 cup milk
- 1/2 cup shredded white cheddar cheese
Instructions
- In a large pot, melt the butter over medium heat.
- Add the onion and garlic, cooking until tender.
- Mix in the grated carrots and cook for another 2 minutes.
- Stir in the flour and combine well, cooking for an additional minute.
- Slowly pour in the chicken broth, stirring constantly.
- Add the broccoli, milk, smoked paprika, salt, and pepper. Simmer for 15 minutes or until the broccoli is tender.
- Stir in the cheddar cheese until melted and well mixed.
- Serve hot and enjoy.
Notes
For creamier texture, use an immersion blender to puree a portion of the soup before adding cheese.
