Description

A comforting and nutritious broccoli and cheddar soup perfect for cold days, combining fresh broccoli with rich cheddar cheese.


Ingredients

  • 1 large onion
  • 1 tablespoon minced garlic
  • 1/2 cup grated carrots
  • 2 tablespoons flour
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 1/2 tablespoon smoked paprika
  • 1 cup chopped raw broccoli
  • 1 cup milk
  • 1/2 cup shredded white cheddar cheese

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion and garlic, cooking until tender.
  3. Mix in the grated carrots and cook for another 2 minutes.
  4. Stir in the flour and combine well, cooking for an additional minute.
  5. Slowly pour in the chicken broth, stirring constantly.
  6. Add the broccoli, milk, smoked paprika, salt, and pepper. Simmer for 15 minutes or until the broccoli is tender.
  7. Stir in the cheddar cheese until melted and well mixed.
  8. Serve hot and enjoy.

Notes

For creamier texture, use an immersion blender to puree a portion of the soup before adding cheese.
