- 1 medium potato per person
- 150 grams of raw, peeled shrimp
- 6 sticks of surimi
- 1 small can of sweet corn
- 2 tablespoons of mayonnaise
- Salt to taste
Instructions
- Boil the potatoes in salted water until tender, then cool and peel.
- Cut each potato in half lengthwise and carefully scoop out a little of the center.
- In a bowl, chop the scooped potato flesh and mix it with the shrimp, surimi, corn, mayonnaise, and salt.
- Fill the hollowed-out potato halves with the shrimp mixture.
- Serve cold and enjoy!
Notes
Consider using Greek yogurt instead of mayonnaise for a healthier option. Store leftovers in an airtight container in the refrigerator for up to three days.
