Ingredients

Scale
  • 1 medium potato per person
  • 150 grams of raw, peeled shrimp
  • 6 sticks of surimi
  • 1 small can of sweet corn
  • 2 tablespoons of mayonnaise
  • Salt to taste

Instructions

  1. Boil the potatoes in salted water until tender, then cool and peel.
  2. Cut each potato in half lengthwise and carefully scoop out a little of the center.
  3. In a bowl, chop the scooped potato flesh and mix it with the shrimp, surimi, corn, mayonnaise, and salt.
  4. Fill the hollowed-out potato halves with the shrimp mixture.
  5. Serve cold and enjoy!

Notes

Consider using Greek yogurt instead of mayonnaise for a healthier option. Store leftovers in an airtight container in the refrigerator for up to three days.
