Description
Delicious and traditional Mexican Tacos Birria made with slow-cooked beef chuck roast and a blend of flavorful chilies and spices.
Ingredients

- 2 lbs beef chuck roast
- 4 cups beef broth
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 4 cloves garlic
- 1 onion, chopped
- 1 tsp cumin
- 1 tsp oregano
- Salt to taste
- Corn tortillas
- Oaxacan cheese, shredded
- Cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a pot, boil the dried chilies until soft. Remove seeds and blend with garlic, onion, cumin, oregano, and some beef broth until smooth.
- In a large pot, sear the beef chuck on all sides.
- Pour the blended salsa over the meat and add the remaining broth.
- Cover and simmer for 180-240 minutes until the meat is tender and falls apart easily.
- Once cooked, remove the meat and shred it.
- Strain the broth and keep it as consomé.
- Heat the corn tortillas in a skillet, fill them with shredded meat and cheese, fold, and fry until crispy and the cheese melts.
- Serve the tacos with consomé and garnish with cilantro and lime wedges.
Notes
Cooking low and slow is key to achieving tender meat. Experiment with different tortillas and cheeses for unique flavors.
