  • 12 slices hearty white sandwich bread
  • 16 1/4-inch-thick slices vine-ripened tomatoes (from about 3 (6-ounce) tomatoes)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup mayonnaise (6 ounces; 170 g, divided)
  • 8 romaine lettuce leaves (6 ounces; 170 g total, cut in half crosswise)
  • 16 slices deli turkey (about 1 pound; 454 g total; preferably hickory smoked)
  • 16 4-inch toothpicks

Instructions

  1. Cook the bacon in a skillet until crisp; drain on paper towels.
  2. Toast the sandwich bread slices until golden brown.
  3. Spread mayonnaise on one side of each toast slice.
  4. Layer lettuce, tomato, turkey, and bacon on one slice.
  5. Add another slice of toast, then repeat the layering.
  6. Top with the third slice of toast, mayo side down.
  7. Cut diagonally into halves or quarters.
  8. Secure with toothpicks for easy handling.
