- 4 bell peppers
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil
- Shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a mixing bowl, combine cooked rice, black beans, corn, diced tomatoes, cumin, paprika, salt, and pepper.
- Drizzle olive oil over the mixture and stir well.
- Fill each bell pepper with the rice mixture.
- Place the stuffed peppers upright in a baking dish.
- If desired, sprinkle cheese on top of each pepper.
- Cover the dish with foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes until the peppers are tender.
- Serve hot.
