Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil
  • Shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine cooked rice, black beans, corn, diced tomatoes, cumin, paprika, salt, and pepper.
  4. Drizzle olive oil over the mixture and stir well.
  5. Fill each bell pepper with the rice mixture.
  6. Place the stuffed peppers upright in a baking dish.
  7. If desired, sprinkle cheese on top of each pepper.
  8. Cover the dish with foil and bake for 25-30 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the peppers are tender.
  10. Serve hot.
