White Chicken Enchiladas

Description

Delightful white chicken enchiladas wrapped in soft tortillas, filled with creamy chicken and topped with enchilada sauce.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheese (Monterey Jack or cheddar)
  • 1 cup green enchilada sauce
  • 8 flour tortillas
  • 1/2 cup diced green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, cream cheese, sour cream, half of the shredded cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Spread a thin layer of enchilada sauce in the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese and green onions.
  6. Bake for 20-25 minutes or until heated through and cheese is bubbly.
  7. Serve hot.

Notes

Use warm tortillas for easier rolling and adjust seasoning based on your taste. Consider adding more garlic or try different types of cheese.
