Delightful white chicken enchiladas wrapped in soft tortillas, filled with creamy chicken and topped with enchilada sauce.
Ingredients

- 2 cups shredded cooked chicken
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheese (Monterey Jack or cheddar)
- 1 cup green enchilada sauce
- 8 flour tortillas
- 1/2 cup diced green onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, cream cheese, sour cream, half of the shredded cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Spread a thin layer of enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese and green onions.
- Bake for 20-25 minutes or until heated through and cheese is bubbly.
- Serve hot.
Notes
Use warm tortillas for easier rolling and adjust seasoning based on your taste. Consider adding more garlic or try different types of cheese.
